Preparing the Dough:

Add the Eggs and Vanilla

Incorporate the Dry Ingredients
In another bowl, mix the flour and salt, and gradually add them to the creamed mixture.
Add the Dried Fruit
Gently fold in the pistachios and cranberries. This will give your dough a beautiful color and an irresistible flavor.
Shaping and Freezing:

Roll out the dough on plastic wrap, then form a compact log. Wrap it tightly and place it in the freezer for at least 2 hours.
Slicing:
Once the dough is completely frozen, remove it from the freezer and let it rest at room temperature for a few minutes. This will make it easier to slice. Cut the roll into rounds approximately 1 cm thick.
